We hope you’ve been having a great Shrove Tuesday – showing off your pancake flipping skills and hopefully getting your little ones helping with kitchen cleaning duties.
The beauty of pancakes is in their simple recipe, plus being able to get as creative as you like! Whether it’s a sweet or savoury filling, you can add your own twist, or create your very own recipe whilst using your imagination when it comes to decoration!
Sunshine and Happiness Pancake recipe!
Preparation: 10 minutes
Cooking time: 20 minutes
Serves: 6 pancakes approximately
Fun factor: 10/10
Ingredients:
- 50g caster sugar
- 100g flour (either plain or self-raising)
- 1 egg
- Glass of milk
- Fresh strawberries
- Fresh blueberries
- Chocolate chips
- 1 tsp honey
- 1 tsb vegetable oil
Method:

Sieve the flour and sugar into a mixing bowl

Whisk an egg into your flour and sugar mixture

To smooth it out, gradually add and whisk splashes of milk, continue to mix until a thick and smooth batter

Grease a thick layer of vegetable oil on a frying pan (the thick base is very important) and heat the frying pan – ensuring your little ones are at a safe distance!

When the frying pan is hot, ladle in some of the batter into small circle portions.

The pancake is ready to be turned when bubbles start to form on the surface

Flip the pancake and cook until the surface is golden brown, which should be approximately 2 minutes
- Place on a plate and let the pancake cool down
- Dice the fresh strawberries in half and place around the plate, resembling sunshine!
- Line the blueberries as eyes and chocolate chips as a smiley grin – securing it in place with honey
- Eat and enjoy!
